Quick snack or appetizer? Lunch side? This simple, cheesy recipe is tasty and versatile, not to mention super light and simply fabulous!
2 wedges of The Laughing Cow Light Creamy Swiss cheese
About 1/3 of a large cucumber cut into small cubes
1/4 tsp garlic powder
1/4 tsp dried oregano
Pinch of kosher salt and fresh ground black pepper
4 Jarred whole Roasted Red Piquillo peppers
Dried parsley for garnish
Combine the 2 wedges of The Laughing Cow Light Creamy Swiss cheese with the cucumber cubes, garlic powder, oregano, salt and pepper. Keep stirring together until you get a nice creamy texture.
Carefully open a pepper and stuff in the cheese cucumber mixer. Repeat for the 3 additional peppers. Arrange on a plate and garnish with a sprinkle of parsley.
