When St. Patrick’s Day approaches I have this urge to eat green food. I realize this makes no sense. I probably should be craving corn beef and cabbage or Irish soda bread but there is just something so festive about making things GREEN! Like a fun yogurt or my favorite, Green Eggs and Ham!
This year I decided to have a bit o’ green fun with a cheesy party dip. Just imagine how awesome this would look alongside some green jello, green cupcakes and of course green beer!? You could easily do a completely green party spread!
So whether you are hosting a big get-together or staying in with the family, wow them this St. Paddy’s day with a fun, festive green dip. It’s light, tasty and goes with just about anything–whole wheat pitas, crackers, and of course fresh-cut veggies. It’s also a cinch to make and uses only three ingredients!
Ingredients
- 2 cups of baby spinach (42g)
- 1/4 fat free yogurt (56g)
- 6 wedges of The Laughing Cow Light Garlic & Herb
Steps
Puree the spinach and yogurt in a blender or food processor.
Put the spinach puree in a medium bowl with the 6 wedges of The Laughing Cow Light Garlic & Herb and beat with an electric beater until smooth.
Refrigerate for at least an hour.
Serve in a fun bowl surrounded with your favorite dippers!
Note: You can use any of The Laughing Cow Wedge flavors. Garlic & Herb just makes a wonderful dip in my opinion. Although, I’m thinking Light Queso Fresco & Chipotle would absolutely rock with baked tortillas!
