Fun and Tasty Picnic Snack Ideas

Just the word “picnic” can put a smile on your face. It conjures up festive thoughts of fresh air, friends, frisbees, flowers and, of course… food! Next time you’re packing the basket for your summer outing, lighten up by adding some fresh, seasonal fruits and veggies to the mix. Berries, melon, peaches, tomatoes, peas, cherries, zucchini, cucumbers and fresh herbs are all in season now, just to name a few. Try these fun and tasty picnic snack ideas that include luscious seasonal produce.

  • Cube it – melon, that is. Whether it’s cantaloupe, honeydew or watermelon, it’s in season this time of year! It’s refreshing and low in calories for a perfect picnic treat. Couple it with a Mini Babybel for some added protein and flavor. Don’t think you can finish off a whole melon? Toss the extra cubes in the freezer and use them in a smoothie!
  • Chop it – instead of a starchy pasta or potato salad, substitute colorful chopped veggies for the base of your salad. Beets, broccoli and bell peppers of all colors will give you more fiber and a wider variety of vitamins than traditional iceberg lettuce. Add small cubes of lean ham or cheese for a heartier salad side.
  • Wrap it – no more soggy picnic sandwiches! Drain some low-sodium garbanzo beans and toss with chopped tomatoes, cucumbers, basil and olive oil. Pack your favorite tortillas and put it all together when you’re ready to eat. Use your favorite flavor of The Laughing Cow cheese wedge as a tasty and portion-controlled spread.
  • Grill it – whether you’re grilling at your picnic event or want to do it prior, don’t limit yourself to burgers and dogs. Portobello mushrooms, bell peppers, onions and zucchini are great on the grill. To save time, marinate them in your favorite vinaigrette the night before and you’ll be ready to go.
