White Cheddar Mini Babybel, Pepperoni and Cucumber Stacks

I am ecstatic about the new White Cheddar Mini Babybel flavor! White Cheddar has always been one of my favorite cheeses. It’s slightly sharp and creamy, and goes fantastic with some of my favorite snack foods–apples, cucumbers, dried fruits, bell peppers, and of course, pepperoni.

Growing up I was known as the “Pepperoni Queen!” I became obsessed with pepperoni at a young age, demanding pepperoni and cheese sandwiches for lunch. Cheese and crackers were never served without a stick of pepperoni alongside, and don’t even get me started on pepperoni pizza!

So what’s the first thing I did when I got my hands on some of the new White Cheddar? I paired it with pepperoni of course! Nowadays I use the turkey variety, allowing me to indulge in my obsession with much less guilt.

For a fun, tasty snack, try this…

  • 5 slices of cucumber
  • 5 slices of turkey pepperoni
  • 1 White Cheddar Mini Babybel, cut into 5 round slices
  • A sprinkle of parsley or dried basil

Top the cucumber slices with the pepperoni and then the cheese. Sprinkle with parsley.

Using cucumber instead of crackers lightens up the snack while still giving you some great crunch.

When I saw this, I immediately thought CAPRESE!!! Laughing cow has the lovely garlic and herb or mozzerella and sun dried tomato flavors…. You have such gorgeous fresh basil in your garden. You could get some tomatoes and slice them up with the cheese and top with the basil and a splash of olive oil and pepper. Doesn’t that sound divine?
