Every year I serve the same things on Thanksgiving.
Turkey? Check. Mashed potatoes? Check. Stuffing? Check. Cranberry sauce? Check. Corn? Check!
I love the classics, but I also like to get creative in the kitchen. Unfortunately, my family does not share this culinary interest. I can’t mess with the potatoes and stuffing or the husband will kill me. And, I may lose your respect, but cranberry sauce in my house comes from a can. No one will have it any other way. And the turkey? Well, the turkey is just turkey. Sure, I can spice it up a little differently, but at the end of the day, it’s still just plain old turkey.
That leaves us with corn and this year I’ve got the perfect way to serve corn that’s so simple and so tasty, even my family may go for it. I’m calling it the Cheesy Corny Side Dish and this year it will be making a special appearance at my Thanksgiving table.
Cheesy Corny Side Dish
Note: Feel free to double, triple or even quadruple this recipe for your family’s needs. Think of this more like a formula than anything else.
- 1 can corn drained or 1 cup frozen corn (about 250 g)
- 2 wedges of The Laughing Cow Light Garlic and Herb
- 2 tbsp of milk
- 1 tbsp bacon bits
- sprinkle of dried parsley for garnish
In small pot (or larger if you are doubling) add the corn, milk and cheese. Place over medium-high heat. Stir all ingredients together while squishing the wedges to help them melt.
Once the cheese is melted bring to a soft boil. You should see little bubbles in the milk/cheese mixture. Lower to a simmer and add the bacon bits. Stir in letting the flavors merge a bit.
Pour into a serving bowl and sprinkle with parsley for a tasty and pretty Thanksgiving side!
