Two Holiday Appetizers for Entertaining

Red Dipper

Prepping for appetizers around the holidays can be stressful and overwhelming, especially if you want to whip up a delicious dish in 10-15 minutes!  That’s why… we’re featuring two amazing recipes, using The Laughing Cow Light Creamy Swiss Wedges and a few additional ingredients that will be feeding your friends and family in no time!

The Red Pepper Big Dipper

It’s common knowledge that the moon is made of cheese. We know because our parents told us so – and parents don’t lie (usually). But who would have guessed the Big Dipper could taste so good? Why didn’t our parents tell us that?

We know now…it’s made of the creamy goodness of The Laughing Cow Light Creamy Swiss. And we’re sharing this quick and easy recipe so you can enjoy it anytime!

Ingredients

  • 2 pieces The Laughing Cow Light Swiss Original Cheese
  • ¼ cups Roasted Red Pepper
  • 2 Tablespoons Sun-dried Tomatoes
  • ½ teaspoons Honey
  • 1 teaspoon White Balsamic Vinegar
  • ⅛ teaspoons Kosher Salt And Freshly Ground Black Pepper
  • 2 Tablespoons Fresh Basil, Torn Into Pieces

Preparation

Combine all ingredients in a food processor. Pulse until smooth. Season with salt & pepper.
Transfer mixture to a small bowl. Stir in torn basil leaves.
Serve as a dip for veggies or as a sandwich or cracker spread.
makes about ½ cup | serving size: 2 tablespoons

Bruschetta You Won’t Forgetta

There’s not a more appetizing appetizer than a good bruschetta. Cheese, French bread, tomato, onion, garlic, basil, olive oil – what’s not to like? You won’t find a better bruschetta than this. It’s a quick and easy finger food recipe made with The Laughing Cow cheese wedges.

Ingredients

  • 6 whole Wedges Of The Laughing Cow Light Swiss Original Cheese
  • 1 whole French Bread Baguette About 20-inches Long
  • 2 whole Medium Tomatoes Seeded And Finely Chopped
  • ¼ cups Finely Chopped Onion
  • 2 Tablespoons Finely Chopped Garlic
  • 3 Tablespoons Finely Chopped Fresh Basil
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Lemon Juice

Preparation

Slice baguette into 1-inch diagonal slice.
Arrange in a single layer on a baking sheet and broil until lightly toasted.

Spread a layer of cheese on each baguette slice and set aside.

Combine remaining ingredients in a medium bowl and spoon mixture onto prepared baguette slices
