Cheesy New Year’s Eve Recipe

New Year's Eve Recipe

One of my New Year’s Resolutions this year is to continuously try fun new flavor combinations. I’ve found myself in a food rut these past few months and it’s time to jazz things up starting with my New Year’s Eve party spread!

This year I’m serving a bunch of finger foods. Of course I’m planning on the standards like wings, hummus, and stuffed mushrooms, but also going to throw in some wonton pizza bites, mini-apple pies and these new flavorful pinwheels:

French Onion and Cranberry Pinwheels

  • 1 Low-Carb/Whole Grain Tortilla or Flatbread
  • 2 Wedges of The Laughing Cow Light French Onion
  • 3-4 thin slices of deli ham or prosciutto
  • Dried Cranberries
  • Dried Tarragon for sprinkling
  • Dried Parsley for sprinkling

Smear the wedges on the tortilla as evenly as possible.

Cover the cheese with the ham.

Using a handful of dried cranberries, create a row of them towards one end of the tortilla. Fold over the line of cranberries and continue to roll, firmly sealing the end with a bit of the cheese.

Using a serrated knife, cut the roll into thick slices using a light sawing action as to not squeeze out the ingredients and keep the integrity of the pinwheels.

Stand the pinwheels upright and stick a toothpick in each one making them easy to grab. Sprinkle the trays of pinwheels with some dried tarragon and parsley. Both add fabulous flavor and make the dish look more festive!
