By changing her eating habits, new Joy Fit Club Member Kimberly Truesdell was able to drop 116 pounds over the past four years. And she did this without cutting cheese out of her diet!
Thirty-one-year-old Kimberly, who now weighs 129 pounds, kept herself on track by bringing her lunch to work and creating fresh sandwich ideas. One of her favorites was a veggie sandwich on a whole wheat sandwich thin with The Laughing Cow Light Queso Fresco & Chipotle, sprouts, peppers and avocado for about 235 calories. She also ate turkey roll ups with The Laughing Cow Light Creamy Swiss and cucumbers or other vegetables she had – which is only about 165 calories for four of them!
Kimberly was inspired to begin her weight loss journey when a friend joined Weight Watchers and was seeing results. She soon joined as well, and they had a buddy system for support on rough days, according to The Today Show segment. She will also be completing her fast half marathon in October!
