Don’t confuse these Caesar spears with the other kind that were used with great effectiveness by the Romans against the Goths and Huns. These taste much better and without a doubt won’t go nearly as far. It will undoubtedly be one of your favorite quick and easy recipes featuring The Laughing Cow® cheese wedges.


  • 2 whole Wedges Of The Laughing Cow® Swiss Original Cheese
  • 2 teaspoons Light Mayonnaise
  • ½ teaspoons Dijon-style Mustard
  • ½ teaspoons Lemon Juice
  • ½ teaspoons Lemon Zest
  • 1 tablespoon Red Wine Vinegar
  • 1 teaspoon Sugar
  • ½ teaspoons Garlic, Minced
  • 2 whole Anchovies, Mashed
  • Freshly Ground Black Pepper
  • 2 tablespoons Tablespoons Parmesan Cheese, Grated


In a small mixing bowl, combine cheese, mayonnaise, mustard, lemon juice, zest, vinegar and sugar until smooth.
Add garlic, anchovies, black pepper & half of parmesan cheese.
To assemble: using a pastry brush, ‘paint’ the prepared dressing on each romaine leaf.
Divide ‘painted’ romaine leaves among 2 plates. Garnish with remaining tablespoon of

Parmesan, extra black pepper, and croutons, if desired.
