Tomatoes are good for you. Grains are good for you. Vegetables are good for you. Now that that’s settled, here’s a way to make what’s good for you just plain good – add in a creamy spreadable cheese wedge from The Laughing Cow®.

Ingredients

  • 1 whole Wedge Of The Laughing Cow Light® Garlic & Herb Cheese
  • ½ cups Cooked Quinoa
  • 2 Tablespoons Bell Pepper, Diced Small
  • 2 Tablespoons Zucchini, Diced Small
  • 1 whole Cremini Mushroom, Diced Small
  • ½ teaspoons Sun-dried Tomato, Minced
  • ¼ teaspoons Fresh Chives, Chopped
  • ¼ teaspoons Fresh Parsley, Chopped
  • Kosher Salt And Freshly Ground Black Pepper
  • 1 whole Large Vine-ripened Tomato
  • ¼ cups Baby Spinach

Preparation

Slice the top off the tomato.
Using a spoon, carefully core the tomato by removing & discarding the ribs and seeds. Season hollowed tomato with salt & pepper and place cut-side down on paper towels.
In a small mixing bowl, combine cheese, quinoa, pepper, zucchini, mushroom, sun-dried tomato, chive and parsley.
Season with salt and pepper.
Layer the inside of cored tomato with spinach then fill with cheese-quinoa mixture.
