A Tomato That Goes With The Grain |
Tomatoes are good for you. Grains are good for you. Vegetables are good for you. Now that that’s settled, here’s a way to make what’s good for you just plain good – add in a creamy spreadable cheese wedge from The Laughing Cow®.
Slice the top off the tomato.
Using a spoon, carefully core the tomato by removing & discarding the ribs and seeds. Season hollowed tomato with salt & pepper and place cut-side down on paper towels.
In a small mixing bowl, combine cheese, quinoa, pepper, zucchini, mushroom, sun-dried tomato, chive and parsley.
Season with salt and pepper.
Layer the inside of cored tomato with spinach then fill with cheese-quinoa mixture.
