There’s not a more appetizing appetizer than a good bruschetta. Cheese, French bread, tomato, onion, garlic, basil, olive oil – what’s not to like? You won’t find a better bruschetta than this. It’s a quick and easy finger food recipe made with The Laughing Cow® cheese wedges.

Ingredients

6 whole Wedges Of The Laughing Cow® Light Swiss Original Cheese
1 whole French Bread Baguette About 20-inches Long
2 whole Medium Tomatoes Seeded And Finely Chopped
¼ cups Finely Chopped Onion
2 tablespoons Finely Chopped Garlic
3 tablespoons Finely Chopped Fresh Basil
3 tablespoons Extra Virgin Olive Oil
1 tablespoon Lemon Juice

Preparation

Slice baguette into 1-inch diagonal slice.
Arrange in a single layer on a baking sheet and broil until lightly toasted.
Spread a layer of cheese on each baguette slice and set aside.
Combine remaining ingredients in a medium bowl and spoon mixture onto prepared baguette slices.
