Chicken Stuffed with Spinach and Swiss |
Chicken breast stuffed with a mixture of spinach, The Laughing Cow Light Creamy Swiss and spices!
Preheat oven to 350 degrees F.
Trim chicken breast of fat. and flatten to about 1/2 inch thickness.
Unwrap The Laughing Cow Light Creamy Swiss wedge and place in microwave safe bowl. Microwave until melted.
Mix together cooked spinach, melted cheese and spices in a small bowl.
Place spinach mixture on the center of the chicken breast.
Roll/fold chicken breast, securing it with toothpicks to stay closed.
Place on baking sheet sprayed with nonstick spray.
Bake for about 20 minutes or until chicken is fully cooked.
Serve with rice and/or vegetables on the side!
