Nutritional Information

Nix the nachos. Turn down the tacos. Burritos just moved to the head of the list – and The Laughing Cow® cheese wedges are right up there with them. It’s a quick and easy recipe that works for dinner, as an appetizer or even a quick snack. Just don’t be surprised if after one bite, you start speaking Spanish.

Ingredients

  • 2 whole Wedges Of The Laughing Cow® Light Swiss Original Cheese
  • ¼ cups Cooked Brown Rice (or Any Whole Grain Starch)
  • 2 Tablespoons Black Beans
  • 1 Tablespoon Scallion, Sliced Thin
  • 2 Tablespoons Your Favorite Salsa
  • ⅛ teaspoons Kosher Salt & Black Pepper
  • 1 whole 10-inch Flavored Tortilla
  • 1 whole Egg, Scrambled (reserved Warm)
  • 2 Tablespoons Tomato, Seeded And Diced Small
  • 1 Tablespoon Cilantro Leaves
  • Salsa, Cilantro And Tomato (for Garnish)

Preparation

Combine the brown rice, black beans, scallion, salsa & 1 wedge of cheese in a microwave-safe container. Microwave for 45 seconds.
Remove and season with salt and pepper; stir to combine and reserve warm.
Spoon warm black bean-brown rice mixture in the center of the tortilla, one-third from the bottom edge, closest to you.
Top with remaining cheese wedge on the mixture and warm scrambled egg, diced tomato and cilantro.
To wrap, fold the left and right sides of the tortilla toward the center, atop the filling. From there, fold the tortilla bottom up and over the filling, rolling somewhat tightly to secure the ingredients inside.
Cut in half and serve warm. Garnish with additional salsa, cilantro or tomato, if desired.
Substitutions: Not in the mood for breakfast? Leave out the scrambled egg (or substitute with ¼ cup of diced chicken breast) for a great snack, packed with protein!
