Egg Salad without the Mayo
Here is a quick, easy way to make an egg salad that requires no mayonnaise.
Peel and mash 1 hard boiled egg with a fork.
Add 1 wedge of The Laughing Cow Light Creamy Swiss.
Mash together along with a little yellow mustard to taste.
Add salt and pepper to taste also if you’d like.
Spread on toast or crackers.
I like to serve with cucumber slices and baby carrots. The kids will love it!
Note: you don’t have to just use the Creamy Swiss. Any of the other The Laughing Cow wedges should be a tasty treat as well.
(Paprika added for color)
