A quick, healthy anytime meal.


  • ½ teaspoons Extra Virgin Olive Oil
  • 1 whole Egg
  • 1 wedge Your Favorite Laughing Cow Wedge
  • 6 leaves Baby Spinach


Heat 10″ skillet to medium heat with extra virgin olive oil.

Whisk egg until smooth.

Unwrap The Laughing Cow Cheese Wedge and cut cheese into several thin slices.

Roll spinach leaves together and cut into slivers.

Pour prepared egg mixture into pan.

When eggs are almost set, place cheese and spinach on half.

Fold and finish cooking till set.

Season as desired.

This recipe can be modified in SO many ways.
