Light French Onion
Tilapia is fast becoming a fish favorite. What makes its mild, delicate taste even better is when it gets sauced up. And this sauce is definitely up to the task. It’s a simple “gourmet” dinner recipe that everyone will love. Why wouldn’t they? It features The Laughing Cow® Light French Onion cheese wedges.
Preheat oven to 350°. Season tilapia with salt and pepper and bake for 12 to 15 minutes, until fish is opaque and flakes easily with a fork.
Meanwhile heat 1 1/2 tablespoons of olive oil on medium-high heat in a large sauté pan. Add peppers and zucchini, and sauté just until tender. Remove vegetables and set aside.
Reduce heat to medium and add remaining 1 1/2 tablespoons oil. Gradually whisk in half-and-half.
Add cheese wedges and stir mixture until cheese is melted and sauce begins to thicken, about 5 minutes. Stir in chives. Add salt and pepper to taste.
Serve tilapia filets over vegetables, and top with sauce. Garnish with chives.
