Souped-Up Broccoli & Cheese |
There are few things that make you feel better than enjoying a rich, delicious broccoli and cheese soup – especially when it’s made with creamy cheese wedges from The Laughing Cow®. Unless, maybe it’s rich, delicious broccoli and cheese soup that calls for some white wine in it. Just remember, the wine goes into the soup.
Add olive oil to a 2-quart saucepan over medium heat.
Add onion; sauté until soft and translucent (do not brown), about 2 minutes.
Add flour; continue to stir for an additional minute.
Add white wine and stir to combine while scraping the bottom of the pan with a wooden spoon.
Whisk in vegetable broth and allow liquid to come to a simmer. Add broccoli and cook until just tender, about 2 to 3 minutes.
Transfer to a food processor or blender; add spring peas and cheese. Purée until smooth.
Add salt and pepper and taste; adjust seasonings as needed. Serve hot or cold.
