Spring Rolls You’ll Fall For
Everybody loves spring rolls. They’re the first thing you order at a Chinese restaurant. Buy why go out (looks like rain anyway) when you can make great spring rolls at home? It’s a quick and easy recipe with one item you probably already have in your fridge: The Laughing Cow® cheese wedges.
Spread cheese wedges on one side of soft wrap.
Cover the surface of the cheese with basil leaves, leaving an inch at one end uncovered.
Position the wrap in front of you so the small area without basil is at the top. (The exposed part of the wrap with just the cheese will help keep the spring roll secure when rolled.)
To assemble: approximately ¼ from the bottom of the wrap, arrange cilantro sprigs horizontally along the width of the wrap with about ½ inch hanging off each side.
Repeat step 4 with remaining ingredients: red & yellow bell pepper, cucumber, carrot, scallion, avocado & pea shoots.
Rolling: take your time with this step; a tight roll will look (and inevitably taste) the best…but rolling too tight may tear the tortilla, causing veggies to shoot out the sides!
To serve: slice into 1-inch pieces.
