A creamy, smooth, very low calorie soup featuring The Laughing Cow Light Creamy Swiss
Chop zucchini coarsely and add to pot with chicken stock.
Bring to a boil and simmer for 20 minutes or until zucchini is tender.
Puree soup with immersion blender.
Add 2 wedges The Laughing Cow Light Creamy Swiss and whisk until cheese is melted.
Variations: can use 3 wedges of The Laughing Cow and experiment with any flavor.
